Pontiac County Recipes Beef and potato casserole

As part of an ongoing series, we are publishing one recipe every week from Pontiac County Recipes, a small book that is home to a collection of kitchen secrets from across the region, published by Pontiac Printshop in 1968.

Our recent rediscovery of this book has inspired us to recirculate its recipes, by way of this newspaper, through the communities from which they first came to us.

This week, taking inspiration from an old potato attempting to make a ressurgence in the Pontiac (see our story about the Early Rose potato on page eight, we have brought you a beef and potato casserole dish. This casserole is almost like an upside down shepherd’s pie, so heartwarming we hope it will make you “peel” the love for Pontiac County Recipes.
